One of their most recent masterpieces, Josafat Zalapa, is a sophisticated culinary gem that seamlessly blends rich Mexican food culture with subtle Eastern influences. Housed in a beautiful 19th-century building in the heart of Morelia, the restaurant is more than just an eatery; it is an experience, a journey through flavours and textures, infused with art and history. The concept is inspired by the Japanese term "Omakase", revolves around the idea of trust and the culinary expertise of the chef. Guests are welcomed into an enchanting environment, where every corner is steeped in history and sophistication. From the corridors leading to a cloister with a collection of artworks to the sculptural bar at the centre of the space, every element has been carefully designed to evoke a sense of wonder and discovery.

Zalapa's architectural arrangement, with its harmonious blend of baroque elements and contemporary design elements, creates an inviting atmosphere where guests immediately feel at home. Solid stone walls embrace the central bar, where the chef performs his culinary symphonies like a conductor, while subtle lighting accentuates the property's historic charm. The interior pays homage to the past, with wooden floors, pigmented cement coatings and custom-made furniture that blend seamlessly with the building's architectural splendour. Every chair, lamp and artwork has been carefully chosen and placed to create a sense of timeless elegance and sophistication, while at the same time highlighting the chef's unique taste.
