About 1 700 years ago, during the ferocious eruption of the Xitle volcano, a unique rocky landscape emerged south of Mexico City. Once revealing the power of nature, the hard rock and rugged terrain transformed into an ecosystem full of life and mysticism. It was this same rugged landscape that provided the perfect canvas for master architects such as Luis Barragán and Max Ludwig Cetto Day to create their visionary residential development, Jardines del Pedregal. Against the backdrop of this masterpiece, restaurant Rocasal was born. At the end of August 2021, this unique restaurant opened its doors with a promise to the residents of Jardines del Pedregal: a culinary journey through the continents, led by talented chef Atala Olmos.
Upon entering Rocasal, you immediately feel the ambience of the minimalist interior, inspired by the modernity of the 1950s. Geometric artworks adorn the walls, while the warm tones remind you of the volcanic rock on which the restaurant is built, and the salt that symbolises the essence of flavour. The space is designed to accommodate families, friends and couples alike, whether in the large, welcoming dining room or in the exclusive lounge. Everything in Rocasal exudes attention to detail. From the tableware crafted by Mexican artisans to the glassware from Oaxaca, every element tells a story. At the helm of this culinary gem is Atala Olmos, a chef with an impressive 20 years of experience who forged her expertise in kitchens around the world. From Spain she learned respect for ingredients and refined product combinations, from Asia she brought the discipline and precision that elevate her dishes to perfection, and in the United States she learned the power of local and seasonal cooking. With Rocasal, Atala has the opportunity to combine everything she gathered on three continents into a harmony of flavours and textures. ‘Rocasal is a place for everyone. We want to be a concept that stands the test of time,’ she says with a smile. Her dedication to craft is palpable in every part of every dish.

The culinary journey at Rocasal starts with the basics: bread. Their home-baked cocoa bread with blueberries and dried apricots, served with ranch butter, is an experience in itself. For those who really love a good start, we recommend the mackerel ceviche, an explosion of Latin flavours with mojito foam and a subtle hint of rum and guacamole. For the main courses, the curry chicken takes you to faraway Asian cuisine, where comfort and warmth come together in one plate. Vegetarian diners, for instance, can enjoy the spinach gnocchi in a rich Parmesan cheese sauce, with a subtle hint of garlic. A savoury and sophisticated dish. And if you are not yet convinced, you have not heard of the dessert. Chocolate, the ingredient that chef Atala most identifies with, is celebrated here as a tribute to Mexican culture.
